Easter Cake Recipe
Hello! For years, I have seen pictures of this beautiful cake recipe, but I haven’t ever made it. This year, I changed that! Below I have attached the chocolate cake recipe that I have been perfecting for years. I have also attached my favorite vanilla buttercream with the cake assembly directions.
Something that is also important to note, is that I prefer to replace eggs with greek yogurt. It makes the cake extra moist. If you prefer to use eggs, you can replace the yogurt with 2 large eggs.

Easter Cake Recipe:
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup milk
1/2 cup vegetable oil
1/2 cup plain greek yogurt
2 teaspoons vanilla
1 cup boiling water
Preheat oven to 350 degrees.
Combine flour, sugar, cocoa powder, baking powder, baking soda, and salt into a large bowl or stand mixer. Thoroughly mix dry ingredients until well combined.
Add milk, oil, greek yogurt, and vanilla to the dry ingredients. Mix on medium speed until well combined. Reduce speed and add in boiling water.
Distribute cake batter between two well buttered 9-inch pans. Put in the oven and bake for 30-35 minutes or until you can insert a toothpick into the middle of the cake and it comes out clean.
Remove from oven and allow it to completely cool.
Vanilla Buttercream:
3 cups powder sugar
1/3 cup softened butter
1 1/2 teaspoons vanilla
2 tablespoons milk
In a medium bowl, mix powder sugar and butter until well combined. Stir in the vanilla and 1 tablespoon milk.
Gradually beat in the remaining milk until you achieve the desired consistency. It should be smooth and spreadable. If it is too thin, you can add in a little powder sugar.
Decoration and Assembly:
1 jar marshmallow cream
2 peeps
1 chocolate bunny
Handful of Cadbury eggs
3 bags edible grass
Once the cakes have completely cooled, level off the rounded top of each cake. Place one cake on desired serving platter. On top of that cake, spread the jar of marshmallow cream. Put the second layer on.
Frost the outside of the cake with the buttercream frosting.
Cut the edible grass into 1 inch pieces. Spray with a light coat of water and gradually mix until the grass starts to clump. Place the clumps around the cake until it is completely covered in the edible grass. Once finally covered, spray the cake in a light coat of water to keep the grass stuck to the cake.
Place the chocolate bunny and peeps on top of the cake in your desired placement. Fill in the rest of the cake top with Cadbury eggs.
